Beverages
- Nutmeg, cardamom, ginger, cinnamon, pepper, green chilli, mace, cloves, vertivert, decalipes, etc. are some of the natural extracts used in alcoholic beverages. Addition of spice oils and oleoresins to alcoholic beverages and alcoholic cordials to improve their flavor and acceptability is commonly accepted around the world because of the stability and naturalness that is assured. Some flavors used are cinnamon, ginger, cardamom and vanilla.
- Ginger, cardamom, cloves, basil, pepper, nutmeg, cassia, mulberry fruit and jasmine are used as flavors in tea beverages.
- In the current scenario of health awareness, extracts of bacopa monnieri, ashwagandha, and licorice are some of the healthy and nutritious ingredients used in tea.
- Cardamom, ginger, decalipes, vertivert, green tea, mint, etc. are used to flavor bottled water.
- Ginger, pineapple, mango, dates, apricot, plum, etc. are some of the popular flavors used in the manufacture of Squash.
- The flavor of Butter milk products can be enhanced with the addition of extracts of green chillies, green ginger, hing, coriander, cumin, curry leaf, etc.
- Flavored milk with cardamom, cumin or fruit extracts like mulberry, apricot, dates, plums, mango, etc. have flavors that can’t be replicated with artificial flavors.
- In the case of soft beverages (soft drinks) which are sweet, flavored and carbonated, extracts of Vanilla, Ginger, Cardamom, Cinnamon, etc. are used to impart flavors.
- For Spice drinks – non-alcoholic carbonated beverages with a natural spicy flavor and taste, spice oils are used as flavoring agents (eg; ginger oil for ginger beer). Also, cinnamon, cardamom and vanilla.
