Ketchups, Sauces, Dips & Seasonings

Oleoresin and essential oils tend to be used in all types of dips & seasonings in large scale production. Some common applications are:

  • Oleoresins of tamarind, onion, garlic, paprika, and capsicum are main spice ingredients to be used for sauces and ketchups.(eg; Tomato chilli sauce, Tomato ketchup, Tomato sauces and other kinds of sauces.)
  • Ketchup manufacturers use paprika as a natural colorant. Extracts of cardamom, cloves, cassia, cumin, pepper & mace are also added to meet different flavor requirements.
  • Oleoresins of green chillies, green pepper, green onion, green ginger and green garlic impart freshness to ketchup or other types of dips or chutneys.
  • In case of seasonings for snacks, “dusters” using extracts of pepper, capsaicin, garlic, ginger, basil, thyme, sage, etc. are added to give a top note effect.
  • In the case of Savory spreads, oleoresins and spice oils have a very significant role in providing flavoring plus visual impact. Onion and garlic oleoresins play an important role in defining and boosting the flavor profile of cheeses and spreads.
